The self-taught sweet maker Michael Christensen established Almuegaarden Sweets and Confectionery back in the 20th century as one of the first old-fashioned sweet producers in Denmark.
The sweet factory needed placing in the right environment, and therefore, the idyllic red and white timbered farm called Almuegaarden in the little village of Lov near Næstved on south Zealand was chosen.
The little sweet factory produced all the classic varieties of boiled sweets, including some new variants requested by customers. All this was done using traditional handicraft and hand driven machinery, some of it dating from the 1800’s.
All our sweets are still produced at Almuegaarden, and through the years, new products have appeared, so that now one can find sugar-free sweets together with beautiful motif sweets for all occasions.
Almuegaarden Sweets and Confectionery has, with the help of three generations of the Christensen family, developed into one of the world’s most renowned manufacturers of hand-made high quality sweets, with exports to the whole of Scandinavia and a growing customer base in the rest of Europe. Almuegaarden is restrained solely by its production ethics, in that we never compromise on quality or our craftsmanship for the sake of industrialising our production.

The sweet shop is situated in Tivoli’s ‘cheerful corner’ surrounded by perfectly matching old-fashioned surroundings built in renaissance style.
Inside the shop, our skilful sweet makers have been very creative, and produced giant crowns and torches from sweet-mix to create unique surroundings, giving customers a special experience.

Our sweets are produced from the finest raw materials and hand-made using traditional techniques that stem from the 1800s.
The sweet-mix is heated in large cauldrons over open flame, and when at the right temperature, is poured onto a cooling table.
Natural flavours and colourings are now added whilst the mix cools. Thereafter, the mix is hand lifted and ‘worked’ on a hook until it reaches the correct consistency and colour, all depending on the type of sweet to be made. This last process is called ‘aeration’ and is the oldest and most correct way to prepare traditional sweets.
The coloured sweet-mixtures are now hand formed on natural leather, where they are combined to form a single giant sweet of 50 kilograms. This mass is now lifted over to an old fashioned machine called a ‘clump roller’ which keeps the giant sweet warm and round.
The sweet is now pulled and clipped by hand into 1-meter long sticks using large tailor’s scissors, and the sticks are then rolled whilst they cool.
Once the sticks have cooled, they are chopped manually into their final size using a specially weighted knife which in technical jargon is called a ‘rockse’, giving the name ‘rocks’ to the sweets. The very first chop is always the most exciting, for this is where the interior of the sweet-mix first sees the light of day, and we get to see the result of our efforts in the form of a beautifully formed motif in the middle of the sweet.
